Instructions:

Marinate the Chicken:

In a bowl, combine the sliced chicken, soy sauce, rice wine (or dry sherry), cornstarch, salt, and pepper. Mix well and let it marinate for at least 15-20 minutes while you prepare the other ingredients.

 

Soak and Prep the Jujubes:

Rinse the dried red jujubes under cold water, then soak them in warm water for about 10-15 minutes until they become plump and slightly softened. After soaking, remove the pits and set the jujubes aside.

 

Stir-Fry:

Heat the vegetable oil in a wok or large skillet over high heat.

Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
